First marinate the chicken for frying:

One large egg (beat well )
Around 240ml of buttermilk
All purpose flour around 200gm
Vegetable oil

For seasoning:

Kosher salt (1 tablet spoon)
Black pepper ( 1 tablet spoon)
Dried mustard (1 tablet spoon)
Paprika powder 2-3 table spoon
1 table spoon dried oregano

GETTING THE SEASONINGS AND BREADING READY

Blend all spices in a food processor until uniform. This comprises celery salt, garlic salt, kosher salt, dried herbs, ground black and white pepper, dry mustard, and paprika. Pulse until the herbs are uniformly chopped.

Add 1/2 teaspoon of Accent Seasoning (MSG) per pound (0.45 kg) of chicken for a genuine taste. Flavor enhancer MSG is unhealthy. If oregano and thyme are unavailable, use marjoram and sage.

FRYING CHICKEN

Fill a frying pan with vegetable oil. Submerge the chicken in deep oil. Use 2 quarts (1.9 L) of oil. Use another neutral-tasting oil. Avoid olive oil because of its strong taste.
Medium-high heat the oil to 350 °F (177 °C). Avoid leaving the frying for a few minutes. Oil heats quickly. Track oil temperature using a candy-making or oil thermometer. Use a wooden spoon handle to measure oil temperature without a thermometer. Bubbles surrounding the handle indicate oil readiness.
Fry chicken batches for 12–18 minutes. 12–14 minutes for breasts and wings. [17] 15–18 minutes for legs and thighs. At 165 °F (74 °C), the chicken is done. Meat thermometers measure temperature. The oil should be deep enough to sear the chicken evenly without turning it. Put the chicken in a fryer basket, don’t overcrowd it, and dip it in hot oil to make it easier to remove.
Transfer chicken to a wire cooling rack with metal tongs. A baking sheet beneath the cooling rack can collect oil droplets and keep your surface clean. Serve the chicken at room temperature! Don’t place chicken on newspaper or paper towels. This traps steam, softening the chicken. Lift the frying basket and hook it over the deep fryer. Tong the chicken pieces out.
